Here, the ale yeast fermentation takes place on the top and it is brewed usually with a higher temperature compared to lager yeast. Depending on the brewery's type of water, location, and stuffs..., the ale yeast fermentations will have unique esters that lets out aromas ranging from flowery to fruity. Hence, ale is a golden classic.Lager
The lager yeast fermentation takes place at the bottom and is brewed with a cooler temperature. Lager is meant for production and storage during winter, just like the literal translation of lager, "to store". By keeping it at cool climate to mature, lager yeast fermentation allows other flavours like hops to develop distinctively. Now, lager is cool and takes simplicity.
